Cuisine - flavours and colors of Ukrainian culture

 

Ukrainiancuisine is verymuch a partofthe population's culture, lifestyleandcustoms. Well-knownforitsgreat diversity andamazingflavors, Ukrainiancuisinehashad a numberofinfluencesincludingRussian, Polish, GermanandTurkish.

TheLvivorLuts’kregionsofUkraine, forexample, display a cuisinethatresemblesthePolishcuisine, with Pork meatbeingthemainingredientformostdishes. The north-easternprovinces, suchasSumy, KharkivorLuhans’kshowinfluencesfromtheRussiancuisine, whilethesouthernpartofUkrainehasseveralrecipesthatarespecifictoMoldovaandRomania. AgriculturehasalwaysbeenusedextensivelyinUkraineand wheat, rye, oats and millet were themainingredientsforanymealforcenturies. 

PopularingredientsinthecuisineofUkraine are meat, mushrooms, vegetables, berries, fruitandherbs. AsUkrainiansareextremelyhospitabletheirmealsareservedinverygenerousquantities.

SomeofthebestUkrainiancuisineisactuallyverysimple. Manyingredientsareusedindifferent ways so they are connected inunusualcombinations, creating a uniqueandsumptuousdish. Consideredthe “breadbasketofEurope”, itfollowsthat breadis a stapleinUkraine. Therearedozensofmethodsusedinpreparingbreads, whichareoftenusedin rituals and customs. Dishesoftencontainpickledvegetableswhenthesearenotinseasonandcertaindishescanonlybemadewheningredientsareavailable. Pastriesandcakesarepopular, butnotverysweet.

 

 

 

 

 

 

 

 

 

Ukrainian traditional dishes

Ukrainianfood is oneoftherichestnationalcuisines. ItsdishesarewellknownfarawayfromUkraine. AndtheUkrainianrecipesofthefoodsareverypopularnowadays. Isanyone, whodoesn’tknowtheUkrainianBorsch?

TheUkrainian food is characterized with largenumberofcomponents. ForexamplethetraditionalUkrainianfood – borsch – contains 20 components. Thepeculiaritieshavethethermalprocessingoftheproductsofthedishes. As a rule, there are used several typesofthermalprocessingforthepreparingofthefood (frying, boiling, stewing, baking). TherulesoffoodprocessingarestrictlyheldinUkrainianrestaurants, toreachthebesttasteofthenationaldishes. TherecipesoftheUkrainiancuisineincludethenumberofdifferentfruitsandvegetables, aswellasmeat, poultry, fish, mushroomsandberries. Themostcommonmeatproductispork. Themeatispresentinlargeamountinfirstcourses, amongwhichthemajoroneisborsch. 
 
InUkrainianfood porch occupies the firstplace, butnotthesingleone. Thepopulardishesarealsocereals: millet, buckwheat, pumpkinetc. TheratherimportantplaceinrecipesofUkrainianfoodbelongstoflouryfoods: curds, dumplings, grechaniki, cottagecheesepatty, potaptsy, pancakes, verguny, mandryky, puchkenykyandothers. Therichassortmentofeggdishes (friedeggswith “salo” (fat) andsausageetc). 
 
Amongthe traditional sweetfoods the mostpopularareuswars (stewedfruits) andjelliedfruits. Topreparesweetdishesareusedplums, apples, pears, apricots, cherries, redcurrants, strawberries, wildstrawberries, raspberries, honey, nuts. Ukrainiancuisinewasalwaysfamousforthebignumberoffoodswithfruitsandberries, raisedontheUkrainianlands.

Theverytastefularedishes, whichstewedinceramicpots: roastmeat, curdswithsourcream, stewedcabbage, potatoeswithmeatandprunes. 
 
Ukrainiancuisine has dozensthousandsoffoodrecipes, whicharecharacterizedwithplanefoodcookingandhightastequalities. Themodernnationalculinaryartpreservedandenrichedtheoldgoodtraditions.

 

Foodforreligiousandholidaycelebration


Around 85 percentofUkrainiansareChristian. Therefore, themostimportantholidayintheUkrainianchurchisEaster, followedbyChristmas. Bothholidaysarecelebratedaccordingtothe old-styleJuliancalendar, resultinginChristmasDayfallingonJanuary 7. ChristmasEveiscalledthe Sviaty Vechir (HolyEvening). Tocelebrate, a ritualmealistraditionallypreparedwith 12 mostlymeatlessdishes, whichsymbolizethe 12 apostleswhogatheredattheLastSupper. Insomehomes, thesuppertableisscatteredwithsomehay, inmemoryofbabyJesusinthemanger, withanelaboratetablecloth. Kolach is a traditionalbreadplacedinthemiddleofthetable. Themealusuallybeginswith a smallbowlof kutya , a mixtureofcookedwheat, honey, poppyseeds, choppednuts, andapples. Thisisfollowedbyseveralfishdishes, mushrooms, holubtsi (stuffed cabbage), varenyky (dumplings), fruits, cakes, suchas makiwnyk (poppy seedcake) andbread. Borshch (a heartysoup) isusuallyincludedaswell.

As totheTraditionalUkrainianEasterBasket we can emphasize such dishes as paska (EasterBread),HamPork (somepeoplealsoaddlambandveal), kolbasa,RedBeets,Vinaigrette, Horseradish, BoiledEggs (including pysanki for decoration),CheeseButter, SaltWine (optional).

Pechenya – roastpork, lamb, beeforveal. 
Studynets – jelliedmeatorfish. 
Kotljetys – fishormeatfritters. 
Deruny – potatofrittersservedwithsourcreamorcottagecheese. 
Shashlyk – typeofshishkebabusuallywithmarinatedlambandvegetables.

Dessert 
Tort – cakesoftenmadewithgroundwalnutsoralmondsinsteadofflour. 
Kutia – a Christmasdessertwithhoney, nuts, poppyseedsandwheat. 
Zhely – jelliedfruit. 
Pampushky – frieddough, similartodoughnuts.

Beverages 
Kvas – madefrombreadwith a sweet-sourtaste. 
Compote – driedorfreshfruitdrink.
